Why yes, you did read that correctly. This week I bought 100 lbs of potatoes, but I can explain.
I messed up.
First, Papa the Farmer did our regular grocery trip. He bought 20 lbs of potatoes, brought them into the house and put them away. I didn’t even look at the groceries so I didn’t know they were there. The next day I had to run an errand in the tiny town nearest us. At the local grocer I noticed they had baby potatoes on sale for $1.50/bag. It’s been a long time since we had baby potatoes so I bought 6 lbs. I also bought 30 lbs of regular potatoes because they were a good price and we can eat a lot of potatoes. I checked out and when I returned my shopping cart to the store I noticed there was a clearance rack and it was full of…. you guessed it…. potatoes! I bought 40 more lbs! If you’re doing the math, that’s a grand total of 96 lbs of potatoes in our kitchen right now.
This Week’s Menu:
It’s going to be the week of the potato at our house this week. Please keep in mind that we won’t only be eating potatoes. We serve a large salad at every meal and I’ll be making vegetable side dishes too. But you better believe that there will be potatoes involved in at least one meal per day for the next little while.
- Sunday – Vegetable Casserole
Roasted Rosemary Potatoes
- Monday – Try Something New Night
Melting Potatoes (Crunchy on the outside and creamy on the inside)
- Tuesday – Soup & Salad
- Wednesday – Patties
Spinach & Garlic Potato Patties
- Thursday – Beans
Potato & Green Bean Salad
- Friday – “Ethnic” Food
Roasted Potato Quesadillas
- Saturday – Something Easy That I can Make Ahead of Time
Stuffed Baked Potatoes
