Today I am sharing my family’s vegan gluten free meal plan for April!
I find that when I plan our family’s meals each week I feel overwhelmed with more choices than I can possibly fit into just 7 days. Which one recipe should I pick when there are so many that look delicious? For me, it’s easier to plan an entire month at a time. If I see 2 or 3 potato recipes I’d like to try, no problem! I just spread them out over the month instead of scheduling them all into the same week (which is totally what I would do if I didn’t live with other people… people who don’t want to eat only potatoes all week long!) For me, planning monthly is faster and easier than planning weekly. I sit down and get the job done and then I don’t have to think about it again until next month!

My secret menu-planning-weapon is a site called Plan to Eat. I sign in and then just drag and drop recipes onto the monthly calendar and it auto-populates a shopping list like magic. My husband knows our login and he can access our shopping list from the store. It’s so easy and convenient. After trying several menu planning software services, Plan to eat is by far my favorite!
Not all the recipes on the list below are vegan, but my husband and I both know to automatically swap out non-vegan ingredients for a vegan substitute. For example, if cheese shows up on our shopping list, we just purchase nutritional yeast instead.
And of course we serve every meal with a big, delicious, fresh tossed salad!

Hi Alina, Love seeing your meal plan as we eat a vegan diet and are considering trying gluten free. I have a question about Plan to Eat. Do they have recipes on there? Oh, I just re-read your post. So you find recipes online and then drag them to the site. If I try Plan to Eat, can I access your recipes or those of others?

Plan to eat is great! You can access my recipes by clicking on the links in this post, but it’s even better than that. As you’re browsing the internet you can save any recipe you find and Plan to Eat automatically imports it into your recipe book. Then when you plan the recipe it automatically imports all the ingredients to your shopping list and you can modify it to serve a different number of people.
